Chef Al's Corner
What a joy it is to be able to celebrate the 2008 season with all of you. My kitchen staff and I consider it a privilege serving everyone at the Yacht Club of Stone Harbor. This wedding season has turned out well so far. We have had some awesome weddings this year and are looking forward to more this season. The staff and I would like to welcome all the new members to the club. If we can help with anything, please don’t hesitate to ask us.
Let’s not forget that the Dining Room opens on June 11th. I am very excited about June 24th with Ballroom Dancing, after watching Dancing with the Stars this winter. I can’t wait to see everyone with their dancing shoes on!
Side Note: The staff and I are trying our best to keep our prices in line. It’s a little difficult with gas prices and the cost of flour and grains. We are striving to do the best that we can.

Chef Al’s Recipe for Short Bread Cookies
1 cup sugar
3 sticks butter
1 teaspoon vanilla
3 ½ cups flour
¼ teaspoon salt
Mix butter and sugar in a mixing bowl with the paddle attachment until smooth and lighter in color, about 5-6 minutes. Add vanilla and mix to combine. Sift the flour and the salt, then slowly add flour mixture to bowl. Mix to combine. Chill the dough for one hour.
hen chilled, roll out the dough and cut into whatever shape you would like. Bake at 350 degrees for about 12 minutes, or until light golden brown.
